Default a little help with making my new routine

in the past ive always had a pretty common routine for a "beginner". i have been using a 4 days split of back/bis, chest/tris, shoulders, and legs. i have switched between pyramiding my weight and 5x5's and all of this has been working fine for me. ive been gaining weight, im gaining size, and all my lifts have improved dramatically. the only problem with this is that ive been doing it the same way for over a year and i really need a change. ive been researching different forms of periodization and i have a few questions before i go ahead and make up a game plan for my self. as far as using the percentages should i be breaking down every exercise i plan to do? for my first phase i will be doing hypertrophy. for these 4 weeks i plan to do 50-60% of my 1-RM. my dead lift is currently 305 so i would be doing reps of 150-180. now for my supplemental back work that i will be doing on these days such as DB rows and cable rows should i be doing my regular 5x5 or 50-60% of my max?
