Default <TOPIC> What slows down the digestion of carbs more?

A simple question: With calories not an issue, what slows down the digestion of carbohydrates more? 1gram of fat, or 1gram of fiber.


discuss....

if there is research to support your argument, please post.


My take is that fat will have a greater effect on carbohydrate digestion. My feelings are such because it takes my body longer to move a food high in fat out of my stomach in into my intestines. This is based on the taste I experience when I burp hours after a high fat meal.

Unfortunately I have no research for this topic.... but if I had to take an intuitive guess, I'd go with fat.
For the best of both worlds, I try to get some fat and fiber together at all my meals (PostWO exception). Almonds and pistachios work great for this as they are the most fibrous nuts I know of (28g = 3g fiber).
Also, I often have a bowl of raspberries along with my meals (100g = 6g of fiber to 4g of sugar) to help get my fiber count up, and also for their beneficial phytonutrients and antioxidants.

Fat. When fat enters the small intestine it signals (cck) cholecystokinin which travels through the blood to the gallbladder. Once to the gallbladder cck signals it to contract which releases bile so the fat can be emulsified. Once lipase goes to work with other enzymes and there is no longer fat to be emulsified the signal from cck stops. This process takes time.
