Recipes: 0 Rep Power: 5 | Your vegetables? I am not really fond of cooking vegetables...only sauteed onions and peppers with a dab of olive oil. And I usually heat up black and kidney beans from cans. Should I get raw beans instead? I was just wondering if the canned ones are bad in some way. Since healthier food are always a pain in the butt to prepare. What do you guys do to your vegies? I wanna know all the dirty details ![]() |

Recipes: 0 Rep Power: 51 | Hey, We steam most of the vegetables we cook, or eat them fresh. If it's something really basic that's canned, like green beans, I just heat them up in a pot on the stove. Canned vegetables are usually fine, unless they have been canned in a sauce to add flavor. You have to watch out for that. If it's 100% vegetables in the can, without an added sauce, you should be fine with canned veggies. Although, fresh will usually taste better. Always read the label when eating canned food. Sometimes they'll sneak things in on you! - EME Quote:

| IronMass Donator | I cosign on the steaming. I hate cooking. So I need it to be as simple as possible. I have a Black & Decker steamer. Put the veggies in the little bowl, put a chicken breast or two in the outer bowl, sprinkle some lemon juice and fresh ground pepper, and turn it on. 30 min later it's grub time. (If I'm making mass quantities and have more time, I use the oven.) I don't make beans that often because they take so long to prepare and aren't that convenient to carry to work. The veggies I stick to are green beans, broccoli, and potatoes. (I know, pretty boring.) I'll buy the pre-cut peppers and onions for stir-fry. Every blue moon I'll make a tomato-cucumber salad, but that's about it. I pretty much only buy frozen. Buying fresh doesn't really work for me because it spoils before I can use it all.

Recipes: 0 Rep Power: 6 | I like them lightly sauteed in olive oil with seasonings, mainly a little salt and pepper. Or steamed but dressed with olive oil and/or butter (keto) and seasonings. Vegetables are really bland to me, so I have to flavor them somehow, and even then I eat them because I know I have to. It's not a thing I do willingly.

Recipes: 0 Rep Power: 19 | Just fyi: beans are not vegetables. They are an excellent source of complex carbohydrates with a higher level of protein than, say, oats or rice. |

Recipes: 0 Rep Power: 94 | I steam mine in a steamer, or if I'm in a hurry I'll just put frozen vegetables in the microwave in a microwaveable dish for about 4.5 minutes with plastic wrap over it with a few fork holes in it. Then I add lemon juice for flavoring. |

As for beans... I make a salad with lentils, celery, red onion and carrots (all diced really fine) that is dressed with olive oil, lemon, cumin, s+p. That can sit in the frig for a few days so I am not cooking every day. Another salad I make has black eyed peas and sweet potato as the base, along with lots of onion. This is another one I can leave in the frig and pick at as I want. Sometimes my husband comes along and eats it all up, though! I also make a black bean chili with black beans, onion, chili powder, cayenne, and diced tomato. I usually do this with dried beans that I soak and then cook but if I am in a hurry I will used organic, canned beans (just beans - no preservatives or seasonings). This is good over brown rice with a little lime and sour cream (ff or lf). If any of these strikes you, let me know and I will post recipes. I tend to be a kitchen experimenter, so a lot of things I make I just sort of wing as I go but I can usually create a recipe when needed. ![]() | |

Recipes: 0 Rep Power: 5 | Sounds awesome! I wish I could make big batches of Salad, so that I wouldn't have to make a fresh one everyday. But it goes bad since I am the only one eating it (my husband eats it once and awhile). I have gotten really good at cooking cuz of experimenting. So I know what you mean about winging it LoL. I would love to see some of your recipes, so go ahead and post them if you feel to. Thanks again for the info everyone! |

Recipes: 0 Rep Power: 58 | For quick steamed vegetables: i have a clear plastic dome that is made to keep food warm. I put the vegetable on a dinner plate and use this dome to steam the vegetables in the microwave. This is good for asparagus, green beans, broccoli and cauliflower. For a quick stir fry: I use my omelet pan with olive oil and stir fry onions, peppers and other vegetables. Vegetables in chicken broth: A favorite of mine is chunks of potato, green beans and onions cooked in 2 cans of chicken broth. I add olive oil, crushed red pepper, salt, pepper to spice this up. I put this in a large plastic container and use it for serveral meals during the week. Sometimes I eat it like soup garnished with parsley or without the broth as a vegetable serving. Raw vegetables: Carrots, broccoli, cauliflower, spring onions, celery are great for munching with a dip. There are lots of salad greens in the produce section of your grocery store. Some of my favorites are baby spinach, watercress, arugala, red sails, romaine and spring mix. Try these in salads along with mushrooms, radishes, carrots, peppers, onions, red cabbage and white cabbage. For bland vegetables, add some butter (a teaspoon won't kill you) or sprinkle some grated cheese on them. Eat your vegetables! *
