With raw eggs, your body will only absorb about 40-50% of the protein, whereas for cooked eggs, it is around 90% of the protein. As for the protein being denatured when cooked, this is what makes it easier to digest, and we have clever little enzymes in our digestive systems that fold the protein back again (reverse the denaturing process) . |
