Recipes: 0 Rep Power: 68 | Here is an idea I found on another site... Anyway, when I make my eggwhites for breakfast, I make 4 instead of 2 and then split it into 2 portions. I eat one half and put the other half in a tupperware container and then in an insulated lunch bag. It actually keeps pretty well for the 2.5 to 3 hours until the mid-morning snack (what I affectionately call "second breakfast"). I often have a fruit omlette - put sliced bananas or fresk berries in with the egg white while they are cooking and that tastes great.

Recipes: 0 Rep Power: 68 | Here is another idea... if you have a bit of time in the evening.. Try this - 6 egg whites about 3T of sugar sub, 1t cream of tartar then whatever flavor extract you like. Mix all ingredients with mixer until STIFF peaks are formed - so you can form it and it stays - then bake at 350 untill they are golden brown 12-20 minutes depending on your oven. You can add food coloring too they say to make it "pretty" - works for B breakfast along with your other choice. If you make 6 cookies each one counts for 1 egg white, if you make three each one counts for two or you can make two and have each one count for three. It depends on what works best for you.

1)Egg white only -Spray small bowl w/non-stick spray and add egg -Cover w/plastic wrap a poke w/fork 5 times -Microwave 45-60 seconds, salt and pepper to taste RESULTS- Rather light (not rubbery), full of air bubbles from high water activity in white tring to escape. Plain, but fast and easy 2)Egg white w/ diced turkey ham and cheese -Same directions as above + 1/2 oz turkey ham and 1/2 Tablespoon of shredded low fat cheddar. RESULTS-More air bubbles (probably from added water in ham), not as solid overall. A lot more flavor and only about 1 extra minute of prep time. 3)Egg white poached in the microwave -Prep plain egg ass in #1 and set aside -Fill a bowl that's bigger that your egg bowl with enough water to come up 3/4 of the way of your egg bowl, cover and microwave just the water (Leave egg bowl out for now) until boiling or about 4 1/2 minutes in my case. -Remove cover, place egg bowl inside water bowl, cover and mocrowave for 1 minute, check for doneness and microwave about 45 seconds more. RESULTS- Nice and firm with no air bubbles. Very close to egg poached on stove top. Best texture and firmness so far, but also the most time consuming-10 minitues start to finish. 4) 2 whites poached with turkey ham and cheese -Same as above + 1 oz turkey ham and 1 Tablespoon of low fat cheddar -Cook 1min & 30 sec, check for doneness and cook about 1 more minute. RESULTS_Some air bubble, not as firm as #3 but better than #1 & #2. CONCLUSION- If you like poached eggs then #3 and #4 are your way to go. If you just want fast, easy and ok go with methods #1 & #2. McMuffin-What worked best for me (overall taste wise) was method #3 with a 1 oz slice of turkey ham and 1 Tablespoon of lowfat cheddar on a toasted English muffin with some Parkay Fat Free butter spray. It still takes about 10 minutes or less to make but definitely tasted best overall. I hope this helps a little bit, I'm not much for microwave cooking, and I definitely don't recommend vegetables to be mixed into the eggs since they log them down with extra water.
